Baltimore Butter Cake Recipe
An old fashioned, sweet bread type of coffee cake. It can be eaten plain, or topped with pecans, plums, etc. I intend to use it as a base for Peach Cake

Ingredients
  • 1 package Yeast
  • 2/3 cup water, warm
  • 2 teaspoons salt
  • 1/2 cup unsalted butter
  • 1cup milk, scalded
  • 3 eggs, beaten
  • 1 cup mashed potatoes, cooled
  • 7 cups unbleached four, sifted
  • 11/2 cups light-brown sugar
  • 1cup unsalted butter, melted
  • Cinnamon to taste

Directions
  1. Dissolve yeast in warm water. Set aside.
  2. Add sugar, salt and butter to scalded milk. Let cool
  3. Beat in eggs.
  4. Stir In mashed potatoes and yeast mixture.
  5. Gradually add flour.
  6. Turn onto lightly floured board and knead 8 minutes to 10 minutes.
  7. Place in greased bowl, brush with melted butter, cover and let rise until doubled.about 30 to 40 minutes)
  8. Punch down and spread dough in one large, greased, shallow pan or two smaller ones (I use a jellyroll pan).
  9. Cover and let rise again until almost doubled in size (more than 1 inch in height), about 25 minutes.
  10. Sprinkle top with light-brown sugar.
  11. Make depressions in dough with fingertips about an inch apart.
  12. Drizzle melted butter into depressions.
  13. Let rise for ½ hour, then bake in a preheated 350F oven for 20-25 minutes.
  14. Cool in pan; cut and serve while warm.
