How to make it

  • Saute sweet potatoes and onion in oil until tender
  • If they start to stick, add a little water
  • Add black beans, cumin,cinnamon and salt and cook until heated through
  • Divide Bean mixture and cheese among tortillas and roll up
  • Place in a 9x13 inch pan, cover with foil and bake at 350 for 20-25 minutes
  • Swerve with salsa, sour cream, and or avocado
  • Also great with rice and corn on the cob
