How to make it

  • Spray a skillet liberally with Pam and heat up.
  • Saute the onions and pepper then stir in the Chimichurri sauce.
  • Add corn and diced pork chop to onions and peppers. Mix well and reduce heat.
  • Wrap the tortillas in a clean towel and heat in the microwave for about 30 seconds to soften.
  • Spread 2 tbsp of the barbque sauce on each tortilla.
  • Divide the pork mixture evenly on the tortillas and roll them up.
  • If you like a bit of garnish I recommend some shredded white cheddar with some fresh cilantro tossed in. Very pretty.
  • These will reheat well in the microwave. You can roll each up in wax paper and they will keep all week. This is another thing to do with leftover pork chops.

    I don't have left over pork chops but I do have some left over pork roast that I am sure would work the same. Can't wait to try this out - sounds delicious and easy!
