Hot And Spicy Drumsticks

- 2 egg whites, lightly beaten shopping list
- ½1/2 cup yellow cornmeal shopping list
- 2 tsp. chili powder shopping list
- ½1/2 tsp. ground cumin shopping list
- ¼1/4 tsp. salt shopping list
- ½1/2 tsp. Freshly ground black pepper shopping list
- 8 chicken legs, skinned ( 4oz each ) shopping list
- ¼ cup lime or lemon juice shopping list
- lime wedges and parsley sprigs for garnish. shopping list
How to make it
- 1) Preheat oven to 400º. Spray a 13”x 9” baking dish with vegetable cooking spray. Set aside.
- 2) Place egg whites in a shallow bowl. On a sheet of waxed papper, combine cornmeal, chili powder, cumin,salt, and pepper. Mix well. Dip chicken legs, one at a time, in egg whites,then dredge in cornmeal mixture, turning to coat.
- 3) Arrange chicken in prepared dish for 20 minutes, turning once. Drizzle with the lime juice and bake until juices run clear when meat is pierced white a fork, about 10 minutes.
- 4) Place chicken on serving plates. Garnish with lime wedges and parsley sprigs.
- Short cut::
- For quick dredging, place cornmeal and seasonings in a heavy-duty plastic bag. Dip the drumsticks in egg white. Add 4 of the drumsticks to the bag and shake to coat with the cornmeal mixture. Place in prepared dish. Repeat with remaining drumsticks.
