Simple Cherry Pie

- 1 1/2 c plain flour shopping list
- 1 stick butter, chopped into 1" squares shopping list
- 1/4 c ice water shopping list
- 2 eggs' worth of egg whites shopping list
- 3lb cherries (rinsed, pitted: may use sweet dark cherries or tart cherries) shopping list
- 1tbs cinnamon shopping list
- 1 tsp lemon rind shopping list
How to make it
- Process flour and butter in food processor (with metal blades) until crumbly (8 seconds)
- Add ice water and process until well-mixed and moist. Stop before a ball forms.
- Place dough in plastic bag.
- Roll dough into ball using hands (while in plastic bag).
- Flatten ball into disk.
- Refrigerate 10 minutes.
- Roll dough to 1/8" thickness on floured surface.
- Place dough in pie pan.
- Brush surface of dough with egg whites.
- Place the cherries in a bowl.
- Gently mix in cinnamon and lemon rind (if using tart cherries, also add in 1/2 c sugar).
- Pour off extra juices (you don't want a soupy pie!).
- Pour mixture into pie crust.
- Fold excess crust over the top of the filling.
- Bake at 400F for 10 minutes.
- Then bake at 350F for 35 minutes or until crust is golden brown.
- Serve sprinkled with cinnamon and/or powdered sugar, or with vanilla ice cream.
