I adopted this cherry pie recipe from several other recipes with the goal of making a simple, healthier pie in less time. Also works for blueberry pies.

Ingredients
  • 1 1/2 c plain flour
  • 1 stick butter, chopped into 1" squares
  • 1/4 c ice water
  • 3lb cherries (rinsed, pitted: may use sweet dark cherries or tart cherries)
  • 1tbs cinnamon
  • 1 tsp lemon rind

Directions
  1. Process flour and butter in food processor (with metal blades) until crumbly (8 seconds)
  2. Add ice water and process until well-mixed and moist. Stop before a ball forms.
  3. Place dough in plastic bag.
  4. Roll dough into ball using hands (while in plastic bag).
  5. Flatten ball into disk.
  6. Refrigerate 10 minutes.
  7. Roll dough to 1/8" thickness on floured surface.
  8. Place dough in pie pan.
  9. Brush surface of dough with egg whites.
  10. Place the cherries in a bowl.
  11. Gently mix in cinnamon and lemon rind (if using tart cherries, also add in 1/2 c sugar).
  12. Pour mixture into pie crust.
  13. Fold excess crust over the top of the filling.
  14. Bake at 400F for 10 minutes.
  15. Then bake at 350F for 35 minutes or until crust is golden brown.
  16. Serve sprinkled with cinnamon and/or powdered sugar, or with vanilla ice cream.
