How to make it

  • Process flour and butter in food processor (with metal blades) until crumbly (8 seconds)
  • Add ice water and process until well-mixed and moist. Stop before a ball forms.
  • Place dough in plastic bag.
  • Roll dough into ball using hands (while in plastic bag).
  • Flatten ball into disk.
  • Refrigerate 10 minutes.
  • Roll dough to 1/8" thickness on floured surface.
  • Place dough in pie pan.
  • Brush surface of dough with egg whites.
  • Place the cherries in a bowl.
  • Gently mix in cinnamon and lemon rind (if using tart cherries, also add in 1/2 c sugar).
  • Pour off extra juices (you don't want a soupy pie!).
  • Pour mixture into pie crust.
  • Fold excess crust over the top of the filling.
  • Bake at 400F for 10 minutes.
  • Then bake at 350F for 35 minutes or until crust is golden brown.
  • Serve sprinkled with cinnamon and/or powdered sugar, or with vanilla ice cream.
