BBQ Meat Loaf

- Non-stick cooking spray shopping list
- 1/2 c chopped carrot shopping list
- 1/2 c chopped onion shopping list
- 1 tsp mesquite seasoning shopping list
- 1 tsp salt shopping list
- 1 tsp ground black pepper shopping list
- 2 Tbs olive oil shopping list
- 1/3 c bbq sauce shopping list
- 1/4 c salsa shopping list
- 1 egg shopping list
- 1 whole wheat hamburger bun or 2 slices whole wheat bread shopping list
- 1 lb. lean ground beef or turkey shopping list
- 1/2 c salsa shopping list
- 1-1/2 c bbq sauce shopping list
- 1/2 c water shopping list
How to make it
- Preheat oven to 350 degrees. Generously coat six 3" muffin cups with nonstick cooking spray or coat a loaf pan with cooking spray. In large pan,cook carrot,onion,mesquite seasoning,salt,and pepper in hot oil 4 mins. or till tender. Remove from heat. Stir in 1/3 c bbq sauce and 1/4 c salsa. Let cool to room temperature
- In a large bowl,lightly beat the egg;then tear up whole wheat bun and add to egg. Add the room temperature bbq mixture to the egg mixture and combine. Add ground beef or turkey and combine well.
- You can make this into a large meat loaf but I find making individual meat loaves keeps the meat loaf very moist.. Press the meat loaf mixture into prepared muffin cups. Bake 30 mins or till internal temp. is 160. For loaf,cook a bit longer.
- For the glaze: In small saucepan,combine the 1-1/2 c bbq sauce,water, and 1/2 c salsa. Bring to boiling. Reduce heat and simmer,uncovered,15 mins or till reduced to nice glaze consistency.
- To serve,pour glaze over the meat loaves and serve with a big scoop of mashed potatoes.
