With a can of tart cherries and nothing to do with them I made this up tonight, I think it turned out quite well and I will make this often. If you are a fan of cilantro (I am not) it would work well in this salsa.

Ingredients
  • 1 can of tart cherries
  • 1 small yellow onion
  • 2 cloves garlic
  • salt
  • olive oil (I used the roasted red pepper infused oil I made last night)

Directions
  1. Drain the cherries
  2. chop the onion very fine and add to the cherries
  3. same with the garlic
  4. I used quite a bit of the salt to cut the last bit of sweet from the cherry
  5. drizzle your olive oil and stir
  6. enjoy!
