Roasted Garlic Soup

- 6 bulbs garlic shopping list
- 1/2 cup olive oil shopping list
- 1 onion, chopped shopping list
- 1 large russet potato, peeled and diced shopping list
- 4 cups canned low-sodium chicken broth shopping list
- 1/3 cup marsala wine shopping list
- 1 cup heavy whipping cream shopping list
- salt and pepper to taste shopping list
- 1/4 cup chopped chives shopping list
How to make it
- Preheat oven to 400
- Cut off top 1/4 in. of each garlic bulb
- Put bulbs in baking dish and drizzle with olive oil
- Cover with foil
- Bake 45 minutes
- Let garlic cool
- Squeeze garlic out of bulbs and reserve olive oil from baking dish
- Heat reserved oil in a large pot
- Saute onions in it until tender
- Add chicken stock and Marsala and bring to boil
- Add potatoes and roasted garlic
- Reduce heat and simmer 30 minutes
- Puree soup in blender in batches and return to pot
- Add the cream 1/4 cup at a time, constantly stirring slowly
- Season with salt and pepper
- Simmer until completely heated through
- Garnish with chives
