Ingredients
  • 6 bulbs garlic
  • 1/2 cup olive oil
  • 1 onion, chopped
  • 1 large Russet potato, peeled and diced
  • 4 cups canned low-sodium chicken broth
  • 1/3 cup Marsala wine
  • 1 cup heavy whipping cream
  • Salt and pepper to taste
  • 1/4 cup chopped chives

Directions
  1. Preheat oven to 400
  2. Cut off top 1/4 in. of each garlic bulb
  3. Put bulbs in baking dish and drizzle with olive oil
  4. Cover with foil
  5. Bake 45 minutes
  6. Let garlic cool
  7. Squeeze garlic out of bulbs and reserve olive oil from baking dish
  8. Heat reserved oil in a large pot
  9. Saute onions in it until tender
  10. Add chicken stock and Marsala and bring to boil
  11. Add potatoes and roasted garlic
  12. Reduce heat and simmer 30 minutes
  13. Puree soup in blender in batches and return to pot
  14. Add the cream 1/4 cup at a time, constantly stirring slowly
  15. Season with salt and pepper
  16. Simmer until completely heated through
  17. Garnish with chives
