How to make it

  • Preheat oven to 400
  • Cut off top 1/4 in. of each garlic bulb
  • Put bulbs in baking dish and drizzle with olive oil
  • Cover with foil
  • Bake 45 minutes
  • Let garlic cool
  • Squeeze garlic out of bulbs and reserve olive oil from baking dish
  • Heat reserved oil in a large pot
  • Saute onions in it until tender
  • Add chicken stock and Marsala and bring to boil
  • Add potatoes and roasted garlic
  • Reduce heat and simmer 30 minutes
  • Puree soup in blender in batches and return to pot
  • Add the cream 1/4 cup at a time, constantly stirring slowly
  • Season with salt and pepper
  • Simmer until completely heated through
  • Garnish with chives
