Fish Cakes Recipe
I wanted crab cakes, but didn't have crab, and I HATE mayonnaise, so here's what I came up with.

Ingredients
  • 1lb flaky white fish (cod, tilapia, etc)
  • 1cu sour cream
  • 2 eggs, beaten
  • 1 1/2 cu break crumbs
  • zest of 1 lemon
  • juice of 1 lemon
  • 1 medium onion, diced
  • salt/pepper to taste
  • oil for pan frying

Directions
  1. Poach the fish until thoroughly cooked
  2. In a large bowl, flake the fish using a fork
  3. Combine egg, onion, sour cream, lemon zest/juice, salt/pepper, and 1 cu of the bread crumbs into the bowl
  4. Mix very thoroughly
  5. Cover and refrigerate for at least 10 minutes
  6. Form mixture into balls (about 3 inches in diameter)
  7. Roll balls in remaining bread crumbs
  8. Flatten balls into patties
  9. Cook in oiled pan, about 4 minutes per side, until browned.
  10. Feel free to liven it up with strained diced tomatoes or other seasonings
  11. Can serve with dipping sauce of your choice, I use tobasco

Instead of frying the fish that has been caught this year,your recipe was there, and thought perhaps we would try using the crappie in that way.

Served them with a cocktail sauce,they turned out extremely well and received with great enthusiasm.
