Fish Cakes

- 1lb flaky white fish (cod, tilapia, etc) shopping list
- 1cu sour cream shopping list
- 2 eggs, beaten shopping list
- 1 1/2 cu break crumbs shopping list
- zest of 1 lemon shopping list
- juice of 1 lemon shopping list
- 1 medium onion, diced shopping list
- salt/pepper to taste shopping list
- oil for pan frying shopping list
How to make it
- Poach the fish until thoroughly cooked
- In a large bowl, flake the fish using a fork
- Combine egg, onion, sour cream, lemon zest/juice, salt/pepper, and 1 cu of the bread crumbs into the bowl
- Mix very thoroughly
- Cover and refrigerate for at least 10 minutes
- Form mixture into balls (about 3 inches in diameter)
- Roll balls in remaining bread crumbs
- Flatten balls into patties
- Cook in oiled pan, about 4 minutes per side, until browned.
- Feel free to liven it up with strained diced tomatoes or other seasonings
- Can serve with dipping sauce of your choice, I use tobasco
