Broccoli and Tarragon Frittata

- 1 broccoli spear, florets cut off short and precooked shopping list
- 3 eggs, beaten shopping list
- 2 green onions, chopped shopping list
- 1/2 large shallot, chopped shopping list
- 2 cloves garlic, chopped shopping list
- 1/4 cup shredded mild cheddar and monterey jack cheese shopping list
- 3 tbl olive oil shopping list
- 1 tbl butter shopping list
- 1 1/2 tsp dried tarragon shopping list
- coarse kosher salt and coarse ground pepper shopping list
How to make it
- Cut the florets from the broccoli stem and place in a small covered pot with just enough water to keep moist during cooking. Sprinkle with some salt and cook over medium low heat.
- Meanwhile, chop the green onions, shallot, and garlic.
- Add olive oil and butter to a 10 inch skillet and lightly saute. Remove from stovetop.
- Drain the broccoli. Add to the skillet. Add cheese and eggs. Sprinkle the top with coarse salt and pepper to season to taste. Sprinkle with the tarragon.
- Return the skillet to the stove top and simmer over medium heat for 10 minutes.
- When the egg begins to brown around the edges and pull away from the skillet, cook for 2-3 more minutes. The center of the frittata should be slighly moist at this point.
- Break the frittata away from the sides of the skillet, divide and enjoy.
