How to make it

  • CRUST:
  • Preheat oven to 350
  • Toss all ingrediants together and press 2/3 of the mixture on the bottom and sides of a 9" pie plate.
  • Reserve remaining crumbs for the top of pie.
  • Bake 10 minutes
  • Filling:
  • Sprinkle gelatin over 1/4 cup water to soften; set aside
  • Combine sugar, cornstarch and salt in bowl.
  • Mix to a paste with 1/2 cup cold milk.
  • Heat remaining milk.
  • Whisk into cornstarch mixture then return to pan and stir over medium heat while mixture comes to a boil and thickens.
  • Add a little of the mixture to the beaten eggs then return to pan and stir over medium heat for 2-3 minutes.
  • Add softened gelatin and marshmallows; stir until melted.
  • Add vanilla and blend thoroughly.
  • Cover custard with with plastic wrap and set aside to cool.
  • Whip cream until stiff and fold into chilled mixture. Pour into prepared crust.
  • Decorate pie with reserved shortbread
