Snow Pie from the Great White North

- CRUST: shopping list
- 1 1/2 cup storebought shortbread cookie crumvs shopping list
- 1/2 cup icing sugar shopping list
- 1/2 cup shredded coconut shopping list
- 1/4 cup melted butter shopping list
- 1/2 tsp vanilla shopping list
- FILLING: shopping list
- 1 envelope unflavored gelatin( + 1/4 cup water) shopping list
- 2/3 cup sugar shopping list
- 1/3 cup cornstarch shopping list
- pinch salt shopping list
- 3 eggs shopping list
- 2 1/2 cups milk (divided) shopping list
- 12 large marshmallows or 48 small shopping list
- 2 tsp vanilla shopping list
- 1 cup whipping cream shopping list
How to make it
- CRUST:
- Preheat oven to 350
- Toss all ingrediants together and press 2/3 of the mixture on the bottom and sides of a 9" pie plate.
- Reserve remaining crumbs for the top of pie.
- Bake 10 minutes
- Filling:
- Sprinkle gelatin over 1/4 cup water to soften; set aside
- Combine sugar, cornstarch and salt in bowl.
- Mix to a paste with 1/2 cup cold milk.
- Heat remaining milk.
- Whisk into cornstarch mixture then return to pan and stir over medium heat while mixture comes to a boil and thickens.
- Add a little of the mixture to the beaten eggs then return to pan and stir over medium heat for 2-3 minutes.
- Add softened gelatin and marshmallows; stir until melted.
- Add vanilla and blend thoroughly.
- Cover custard with with plastic wrap and set aside to cool.
- Whip cream until stiff and fold into chilled mixture. Pour into prepared crust.
- Decorate pie with reserved shortbread
