Jerk Mix Recipe
A spicy Jamaican rub for chicken, pork, shrimp, beef, and firm white fish. Great for grilling!

Ingredients
  • 2 tbsp. olive oil
  • 1/2 cup red wine vinegar
  • 1/3 cup fresh lime juice
  • 2 jalapeno chilies, finely chopped seeds and ribs removed.
  • 6 garlic cloves, minced
  • 2 tbsp. brown sugar
  • 1 tbsp. ground all-spice
  • 1 tbsp. dried thyme
  • 4 scallions, chopped and trimmed
  • 1 tsp. cayenne pepper
  • 1 tsp. ground cinnamon
  • 1 tsp. salt
  • 1 tsp. ground ginger
  • 1 tsp. white pepper

Directions
  1. Heat oil In small saute pan over med. heat. When oil shimmers, add jalapenos and garlic & saute until garlic starts to color, about 3 min.
  2. Add all-spice, cinnamon, brown sugar, and cayenne and cook, stir constantly, until sugar melts and mixture starts to clump together. Remove from heat & let cool.
  3. Add mixture to a blender, combine thyme, ginger, salt, white pepper, lime juice, scallions, and red wine vinegar, blend until smooth.
  4. Refrigerate for up to 10 days.
