How to make it

  • The pasta with sauce and vegetables is most delicious even without the chicken.!
  • Slice chicken breasts into finger size pieces.
  • Marinate with juice from fresh squeezed lime and smashed garlic and spicy seasoning of choice.
  • Meanwhile cook pasta al dente, rinse with hot water, drain and keep warm.
  • While pasta is cooking, sauté onion and peppers in some olive oil until tender.
  • Add mushrooms and artichoke hearts and stir a few minutes to warm and blend flavors.
  • Take vegetables off heat and set aside.
  • Sauté chicken in olive oil (dredge in flour ) until cooked and golden. Set aside.
  • Make sauce: Heat olive oil and flour , stir constantly over medium heat until mixture starts to thicken.
  • Add and stir in warmed chicken broth stirring constantly until smooth and thickened as desired.
  • Season with spice of choice and garlic powder.
  • Mix warm pasta and warm vegetables with hot sauce and blend well. ( If your sauce is a bit too thick don't worry, it will loosen when mixed with pasta and vegetables. )
  • Place pasta on serving platter.
  • Add on chicken pieces and sprinkle with paprika.
  • Note: add or substitute other ingredients to the pasta such as green olives, capers, anchovies, sun dried tomatoes, roasted red peppers etc. if desired ) as desired
