Green Curry Paste Recipe
This paste is great on and in just about everything. Can be used in many Thai dishes.

Ingredients
  • 1/4 tsp. ground cloves
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cardamom
  • 2 tsp. salt
  • 2 tbsp. peanut oil
  • 10 bird's eye chilies or 6 habanero chilies seeded and ribs removed (leave seeds and ribs if you like spicier)
  • 2 lemongrass stalks finely chopped, tender inner part only.
  • 2 bay leaves
  • One 3 inch piece of ginger, peeled and grated
  • 2 limes grated zest
  • 1 lrg. red onion, chopped
  • 3 garlic cloves, minced

Directions
  1. Combine all ingredients in a food processor and puree to a chunky paste.
  2. Store in refrigerator for up to 1 week.
