Ingredients
  • 1 quart oil for frying
  • 8 eggs
  • 2 pounds pork sausage
  • 4 cups dried bread crumbs, seasoned
  • 1 cup all-purpose flour
  • 4 eggs, beaten

Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  2. Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  3. Flatten the sausage and make a patty to surround each egg. Very lightly flour the sausage and coat with THE 4 BEATEN eggs. Roll in bread crumbs to cover evenly.
  4. Deep fry until golden brown, or pan fry while making sure each side is well cooked. Bake in the preheated oven for 10 minutes.
  5. Cut in half and serve over a bed of lettuce and sliced tomatoes for garnish. If mustard is wanted, a mixture of honey and brown mustard taste gr8 with this.
  6. (OR you could dispense with all the frivolities and just grab one, wrap it in a paper towel and go on your merry little way)

Had these at Harrod's in London -- mmmmmmm. Did you really mean to say the eggs should be beaten -- kind of hard to make them hard boiled them. (-:

Oh yes, I see now -- 12 eggs total!


Part of the ingredients is "4 beaten eggs"

OMG I am so intrigued by these! We go to the PA Ren Faire each year and these are sold there...they sound good but I'm nervous to try them, for fear I won't stop at just ONE...LOL...^5!

Secret: Cut in half. Put open cut face down on a toasted piece of English muffin bread. Spread Hollandaise sauce all over it.
