delicious! 'can't go wrong with SWEET (corn), SPICY (chili powder), and TANGY (lime) flavors my one substitution: 1/2 tsp of fresh, minced garlic instead of garlic salt. crumbled Cotija CheeseThat's what makes the street corn good.

  • * 4 ears sweet corn, husks removed
  • * 2 tablespoons corn oil
  • * 1/2 cup mayonnaise
  • * 1 teaspoon chili powder
  • * 1 teaspoon garlic salt
  • * Freshly ground black pepper
  • * 1 lime, quartered
  • * Special equipment: grill pan

Directions
  1. Preheat a grill pan. Rub corn with oil and place on the grill pan, turning corn so all sides are charred, about 6 to 10 minutes. Meanwhile, mix together mayonnaise, chili powder, garlic salt, and black pepper. Remove corn from grill and brush with the mayonnaise mixture. Serve with lime quarters to squeeze over corn.

This is a great dish! Down here in Texas (the closer you get to Mexico, the better life gets!) we eat this all the time it's called Elote. They do the same but cut the kernals off the corn and serve it all in a styroform cup with parmesan cheese on top, we get it in front of the Mexican store we shop at from a little Mexican woman. Great dish man, thank for posting this one! 5! Dooley
(The 1st time I served my Mexican wife corn on the cobb and she started rubbing Mayonnaise all over her corn I thought what the heck, now I know)
