How to make it

  • --FOR CHICKEN AND SAUCE--
  • Season chicken pieces
  • Brown in butter until golden on each side
  • Remove chicken from pan and set aside
  • Add sherry
  • Add onion and cook until tender
  • Blend in flour and cook until golden brown
  • Stir in chicken broth and sour cream
  • Blend until smooth
  • Add tomatoes, bay leaf and seasoning
  • Arrange pieces in sauce.
  • Cover and reduce heat and simmer 35 minutes or until tender and done
  • Serve over Bed of Pimento Rice
  • --PIMENTO RICE--
  • Combine broth, rice, butter, and salt
  • Heat to boiling
  • Stir once
  • Cover and reduce heat
  • Simmer 14 minutes or until rice is done.
  • Add parsley and pimento
  • Toss lightly
