Mammies Chicken Pimento Rice

- --FOR chicken AND SAUCE-- shopping list
- 12 chicken thighs or 6 breasts, cut in halves...skin on shopping list
- 3 tablespoons butter shopping list
- 2 Tablespoons sherry shopping list
- 1/3 cup minced onion shopping list
- 1/4 cup flour shopping list
- 1 1/2 cup chicken broth shopping list
- 1 1/2 cup sour cream shopping list
- 2 tomatoes, peeled and finely chopped shopping list
- 1 bay leaf shopping list
- 2 teaspoons salt shopping list
- Dash cayenne pepper shopping list
- --FOR pimento RICE-- shopping list
- 3 cups chicken broth shopping list
- 1 1/2 cup uncooked rice shopping list
- 1 1/2 Tablespoons butter shopping list
- 1 1/2 teaspoon salt shopping list
- 3 tablespoons chopped fresh parsley shopping list
- 3 tablespoons diced pimento shopping list
How to make it
- --FOR CHICKEN AND SAUCE--
- Season chicken pieces
- Brown in butter until golden on each side
- Remove chicken from pan and set aside
- Add sherry
- Add onion and cook until tender
- Blend in flour and cook until golden brown
- Stir in chicken broth and sour cream
- Blend until smooth
- Add tomatoes, bay leaf and seasoning
- Arrange pieces in sauce.
- Cover and reduce heat and simmer 35 minutes or until tender and done
- Serve over Bed of Pimento Rice
- --PIMENTO RICE--
- Combine broth, rice, butter, and salt
- Heat to boiling
- Stir once
- Cover and reduce heat
- Simmer 14 minutes or until rice is done.
- Add parsley and pimento
- Toss lightly
