Ingredients
  • 1 bunch cassava leaves (or spinach if u dont have cassava leaves)
  • 1 tablespoon palm oil
  • 1 cup coconut milk
  • 1/4 cup fish meat (bones removed)
  • ¼ cup ground peanuts
  • 1 cloves garlic
  • ½ cup shrimps
  • Salt to taste
  • Lemon Grass

Directions
  1. • the leaves. chop them finely.
  2. • Heat palm oil in a wok and quickly stir fry the fish meat and shrimp over low heat for 5 minutes.
  3. • Add lemongrass, garlic and lemon grass and grounded peanuts Stir fry till the fish and shrimp cook., about 2 minutes
  4. • Toss in the leaves and turn up the heat. Add the diluted coconut milk, cook for another 10 minutes. Do not boil it, just simmer
  5. • Season with salt and pinch of sugar
  6. • Remove the lemongrass,. Serve warm with rice pilaf
