My Favorite Red Velvet Cake Recipe
My all time favorite cake. Moist, rich and melts in your mouth.

Ingredients
  • 3 tbsp. cocoa
  • 2 oz. red food coloring
  • 2 eggs
  • 1 1/2 cup sugar
  • 1/2 cup vegetable shorting
  • 1 cup buttermilk
  • 2 1/2 cup all purpose flour (sifted)
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 tbsp. vinegar
  • 1 tbsp. baking soda
  • For Cream Icing: 1 stick butter (softened)
  • 1/2 cup vegetable shorting
  • 1 cup confection sugar
  • 3 tbsp. flour
  • 2/3 cup milk (at room temp.)
  • 1 tsp. almond flavoring

Directions
  1. Preheat oven to 350 degrees F., Grease and lightly flour 3 -8 inch layer pans.
  2. In a small bowl, mix 3 tbsp. cocoa and red food coloring into a paste, set aside
  3. In a lrg bowl,use a mixer to cream together 1/2 c. vegetable shorting and 1 1/2 c. sugar.
  4. Continue beating, Add coloring paste and 2 eggs, beat well.
  5. Add 1 c. buttermilk, 2 1/2 c. flour (sifted), 1 tsp. vanilla, 1 tsp. salt and beat well.
  6. Stir in by spoon 1 Tbsp. vinegar blend well.
  7. Add 1 tbsp. baking soda, mix well, and bake for 30-35 min.
  8. Mean while: cream with a mixer 1 stick butter (softened), 1/2 c. vegetable shorting, 1 c. confection sugar , and 3 tbsp. flour (1 at a time).
  9. Add 2/3 c. milk 1 tsp. almond flavoring, Beat well.
  10. Let cakes cool on a rack and ice.
