How to make it

  • Mix all the ingredients for the Cajun aioli and keep in refrigerator until ready to serve.
  • Preheat oven to 400 degrees F.
  • Place the potato wedges in a saucepan with 2 quarts of cold salted water. Bring to a boil and then reduce to a simmer for approximately 5 minutes, or until a knife pierces through easily. Drain.
  • In a large bowl, toss the wedges with olive oil. Place the wedges on a baking sheet lined with parchment in single layer. Sprinkle with Cajun spice and salt. Bake for 20-30 minutes, or until golden brown crispy.
  • Sprinkle with fresh chopped parelsy and serve with Cajun Aioli
