Rhubarb Cake Recipe

Ingredients

1 1/2 cup packed brown sugar

1/2 cup white sugar

1/2 cup margarine or butter

2 cups sifted flour

1 egg

1 tsp vanilla

1 cup buttermilk

1 tsp baking soda

2 cups chopped rhubarb

1/4 tsp salt

TOPPING

1/3 cup white sugar

1 tsp cinnamon

Directions

In a large bowl, cream together butter or margarine and sugar. Beat in egg and vanilla.

In another bowl, sift together 2 cups flour, soda, and salt. Add sifted ingredients alternately with buttermilk to creamed mixture.

Put 1/2 the batter into a greased 9/13" pan.

Spread the rhubarb over the batter and then add the remaining batter.

Smooth the top of the cake and sprinkle the sugar/Cinnamon mixture over the batter.

Bake about 50 minutes in a 350 degree oven. Test with a toothpick. It should come out clean.
