Rhubarb Cake

- 1 1/2 cup packed brown sugar shopping list
- 1/2 cup white sugar shopping list
- 1/2 cup margarine or butter shopping list
- 2 cups sifted flour shopping list
- 1 egg shopping list
- 1 tsp vanilla shopping list
- 1 cup buttermilk shopping list
- 1 tsp baking soda shopping list
- 2 cups chopped rhubarb shopping list
- 1/4 tsp salt shopping list
- TOPPING shopping list
- 1/3 cup white sugar shopping list
- 1 tsp cinnamon shopping list
How to make it
- In a large bowl, cream together butter or margarine and sugar. Beat in egg and vanilla.
- In another bowl, sift together 2 cups flour, soda, and salt. Add sifted ingredients alternately with buttermilk to creamed mixture.
- Put 1/2 the batter into a greased 9/13" pan.
- Spread the rhubarb over the batter and then add the remaining batter.
- Smooth the top of the cake and sprinkle the sugar/Cinnamon mixture over the batter.
- Bake about 50 minutes in a 350 degree oven. Test with a toothpick. It should come out clean.
