How to make it

  • In a large bowl, cream together butter or margarine and sugar. Beat in egg and vanilla.
  • In another bowl, sift together 2 cups flour, soda, and salt. Add sifted ingredients alternately with buttermilk to creamed mixture.
  • Put 1/2 the batter into a greased 9/13" pan.
  • Spread the rhubarb over the batter and then add the remaining batter.
  • Smooth the top of the cake and sprinkle the sugar/Cinnamon mixture over the batter.
  • Bake about 50 minutes in a 350 degree oven. Test with a toothpick. It should come out clean.

    Oh how I love rhubarb - I will have to give this a try when I can get my hands on some more...it's actually hard to find in the Chicago area - no one ever seems to know what it is, or has never tried it...they don't know what they're missing!
