Cheesy Potatoes With Chili Mushroom Dip Recipe

Ingredients

6 large even shaped potatoes

12 good sized mushrooms

250 g of grared cheddar (hard yellow cheese)

1 tbsp sambal oelek

1 tbsp real soya sauce

2 tbsp olive oil

2 tsp butter

Directions

Parboil potatoes for 10 minutes

While potatoes are cooking

Finely chop mushrooms in a food processor (about crumb consistency)

Fry the mushrooms in 1 tsp of the butter for 5 minutes

Remove from frying pan

Add sambal oelek and soya sauce to the mushrooms

Mix well and place in bowl

Take potatoes out of water

Carefully slice about 1.5 cm (or 1/2 inch) thick

Fry potato slices in butter and olive oil mix until golden on one side

Turn and add some grated cheese on top of each slice

Take potatoes out of frypan when golden brown on both sides

About the same time as when the cheese has melted

To serve

Place the mushroom mix with a spoon in the centre of a serving platter

Place cheesey potato slices on the platter

To eat

Place a spoonful of the mix on the potato slice and bite…yum
