Cheesy Potatoes With Chili Mushroom Dip

- 6 large even shaped potatoes shopping list
- 12 good sized mushrooms shopping list
- 250 g of grated cheddar (hard yellow cheese) shopping list
- 1 tbsp sambal oelek shopping list
- 1 tbsp real soya sauce shopping list
- 2 tbsp olive oil shopping list
- 2 tsp butter shopping list
How to make it
- Parboil potatoes for 10 minutes
- While potatoes are cooking
- Finely chop mushrooms in a food processor (about crumb consistency)
- Fry the mushrooms in 1 tsp of the butter for 5 minutes
- Remove from frying pan
- Add sambal oelek and soya sauce to the mushrooms
- Mix well and place in bowl
- Take potatoes out of water
- Carefully slice about 1.5 cm (or 1/2 inch) thick
- Fry potato slices in butter and olive oil mix until golden on one side
- Turn and add some grated cheese on top of each slice
- Take potatoes out of frypan when golden brown on both sides
- About the same time as when the cheese has melted
- To serve
- Place the mushroom mix with a spoon in the centre of a serving platter
- Place cheesey potato slices on the platter
- To eat
- Place a spoonful of the mix on the potato slice and bite…yum

this sounds like a very tasty dish and I look forward to making it... I have to admit I had to look up what 'sambal oelek' was...LOL..thank you for a great post and five forks...
