Corn Pudding A La Emma Recipe
This recipe comes from an old cookbook "Gourmet's Guide to New Orleans" and copyrighted in 1933.

Ingredients
  • 6 ears sweet corn, grated
  • 3 eggs
  • 1 teaspoon salt
  • 1 cup milk
  • 2 Tablespoons butter

Directions
  1. Mix butter well,
  2. then add the beaten yolks of eggs,
  3. then the corn and the other ingredients,
  4. lastly the whites of eggs, beaten stiffly.
  5. Bake slowly for 30 minutes.
  6. Grated American cheese may be added.
  7. NOTE: This cookbook does not give degrees for the oven to bake, it just says bake slowly, so I use 300 degrees which turns out well for my oven.
