Panzanella Salad

- 6 c day old bread,torn in bite- size pieces shopping list
- 1/3 c olive oil shopping list
- salt and pepper shopping list
- 3 cloves garlic,minced shopping list
- 1/4 c olive oil shopping list
- 2 Tb balsamic vinegar(I use white balsamic) shopping list
- 4 med. ripe tomatoes,cut in wedges shopping list
- 3/4 c sliced red onion shopping list
- 10 basil leaves,shredded shopping list
- 1/2 c pitted and halved green olives(I use black or kalamata) shopping list
- 1 c fresh mozzarella,cut in bite- size pieces shopping list
How to make it
- Preheat oven to 400 degrees.
- In large bowl, toss bread with 1/3 c olive oil,salt,pepper,and garlic.
- Lay bread on baking sheet and toast in oven until golden,5 to 10 mins;allow to cool slightly.
- While bread is in oven,whisk together 1/4 c balsamic vinegar and olive oil. Gently toss the bread,tomatoes,onion,basil,olives and mozzarella cheese. Toss with the vinaigrette and let stand 20 mins before serving.

This is one of our favorite salads. Hubby and I eat it as a dinner. This has a different twist from mine and I will definitely try it! 5 forks to you!
