Bacon Wrapped Chicken Breast with Raspberry-Muscat Sauce

- 2 boneless, skinless chicken breast halves shopping list
- 2 strips thick cut bacon...I use applewood smoked shopping list
- 3-5 sliced crimini mushrooms shopping list
- 2 tablespoons butter shopping list
- 2 cloves pasted garlic shopping list
- 3 tablespoons red raspberry jam shopping list
- 1 tablespoon raspberry-wine vinegar shopping list
- 1 teaspoon dijon stone-ground mustard shopping list
- 1/3 cup muscat wine shopping list
- salt and pepper to taste shopping list
- 1 teaspoon olive oil shopping list
- 1/8 teaspoon cayenne, or less to taste or totally optional shopping list
How to make it
- Wrap the bacon around the chicken and secure with toothpicks. Heat olive oil in the pan. Salt and pepper chicken. Brown chicken on all sides and crisp up the bacon. Add mushrooms and saute for about 3-5 minutes. Add jam, vinegar, mustard and wine. Add cayenne. Combine everything really well and let sauce reduce by at least half or more. Occasionally spoon sauce and baste the chicken. Add butter at the end to finish sauce.
