I had 2 breasts that I needed to use and came up with these with stuff I had on hand in the fridge!

Ingredients
  • 2 boneless, skinless chicken breast halves
  • 2 strips thick cut bacon...I use applewood smoked
  • 3-5 sliced crimini mushrooms
  • 2 tablespoons butter
  • 2 cloves pasted garlic
  • 3 tablespoons red raspberry jam
  • 1 tablespoon raspberry-wine vinegar
  • 1 teaspoon dijon stone-ground mustard
  • 1/3 cup muscat wine
  • salt and pepper to taste
  • 1 teaspoon olive oil
  • 1/8 teaspoon cayenne, or less to taste or totally optional

Directions
  1. Wrap the bacon around the chicken and secure with toothpicks. Heat olive oil in the pan. Salt and pepper chicken. Brown chicken on all sides and crisp up the bacon. Add mushrooms and saute for about 3-5 minutes. Add jam, vinegar, mustard and wine. Add cayenne. Combine everything really well and let sauce reduce by at least half or more. Occasionally spoon sauce and baste the chicken. Add butter at the end to finish sauce.
