How to make it

  • Wrap the bacon around the chicken and secure with toothpicks. Heat olive oil in the pan. Salt and pepper chicken. Brown chicken on all sides and crisp up the bacon. Add mushrooms and saute for about 3-5 minutes. Add jam, vinegar, mustard and wine. Add cayenne. Combine everything really well and let sauce reduce by at least half or more. Occasionally spoon sauce and baste the chicken. Add butter at the end to finish sauce.
