Rice Borekas - rice and cheese turnovers

- Dough: shopping list
- 1 cup oil shopping list
- 3/4 cups cold water shopping list
- 1/4 tsp. salt shopping list
- 4 1/2 cups flour shopping list
- Filling: shopping list
- 3 cups water shopping list
- 1 tbs. butter (substitute margarine or oil) shopping list
- 1 cup rice shopping list
- 1/2 cup cottage cheese, small curd shopping list
- 1/2 cup parmesan cheese shopping list
- 1/2 cup feta cheese, crumbled shopping list
- 1 tsp. salt shopping list
- 3 eggs shopping list
How to make it
- Prepare the filling:
- Bring water and butter to a boil.
- Lower heat and add the rice.
- Stir and cover the pot and cook rice until water is absorbed.
- Cool rice and add the cheeses, salt and eggs.
- Set aside.
- Prepare the dough:
- Mix together oil, water and salt.
- Gradually add flour until it forms a large ball.
- Take a small amount of dough and roll into a golf ball size, then gently flatter on a clean surface.
- Add small amount of rice and cheese filling to the center and fold over the dough, pinching the edges to close.
- Press the edges with a fork to give it a nice textured border.
- Bake at 400 degrees (F) for 15 minutes or until golden brown.
