Blue Cheese Stuffed Pork Chops Recipe
Updated take on bacon-wrapped pork chops. Crispy prosciutto is a nice touch and gorgonzola gives the chops a nice,creamy flavor. Cooking Pleasures

  • 3 tsp olive oil,divided
  • 1/2 c chopped red onion
  • 2 tsp minced fesh rosemary
  • 1/4 c crumbled Gorgonzola cheese
  • 2 (5to 6 oz) boneless pork chops (1" thick)
  • 4 thin slices prosciutto

Directions
  1. Heat 1-1/2 tsp of the oil in medium nonstick skillet over med-high heat until hot. Cook and stir onion and rosemary 6 mins or until onion is soft. Remove onion mixture;cool. Stir in cheese.
  2. With small knife,make horizontal slit in each pork chop to create a pocket,being careful not to cut all the way through. Fill with blue cheese mixture. Wrap 2 prosciutto slices around each chop to cover chop and opening of pocket;secure with toothpicks.
  3. Heat remaining 1-1/2 tsp oil in same skillet over medium heat until hot. Cook pork 8 to 10 mins or till pale pink in center,turning once. Remove toothpicks before serving.
