Great penne recipe said to derive from Lazio, Italy. Don't like anchovies, add grilled chicken or sausage.

Ingredients
  • 1 lb. Penne
  • 3 tomatoes, chopped
  • 12 anchovy fillets, rinsed, filleted, and chopped
  • 1/2 cup chopped Gaeta or any style of Mediterranean black olives
  • 1 lrg. garlic clove, chopped
  • 2 tbsp. fresh Italian parsley, chopped
  • 2 tbsp. capers, chopped
  • 1 dried red chili, crushed or red pepper flakes
  • 1/4 cup olive oil
  • 2 tbsp. fresh basil, chopped
  • salt to taste

Directions
  1. In a lrg. bowl, combine tomatoes, olives, garlic, anchovies, capers, parsley, chile, olive oil, basil, and salt. Mix well and let stand for 1 hour.
  2. Cook penne until al dente (firm but not hard), stir frequently.
  3. Drain pasta, add to sauce, mix well and serve.

I'll stick with the anchovies, great recipe!


Great recipe .... Dont you cook the sauce at all ? I would simmer the sauce in a saucepan until all water has evaporated .. gusto perfeto !!


I have heard that there is ways to do things with penn.Hmmmmm I may have to try this one soon. Thanks.
