Spicy Tomato Penne

- 1 lb. penne shopping list
- 3 tomatoes, chopped shopping list
- 12 anchovy fillets, rinsed, filleted, and chopped shopping list
- 1/2 cup chopped Gaeta or any style of Mediterranean black olives shopping list
- 1 lrg. garlic clove, chopped shopping list
- 2 tbsp. fresh Italian parsley, chopped shopping list
- 2 tbsp. capers, chopped shopping list
- 1 dried red chili, crushed or red pepper flakes shopping list
- 1/4 cup olive oil shopping list
- 2 tbsp. fresh basil, chopped shopping list
- salt to taste shopping list
How to make it
- In a lrg. bowl, combine tomatoes, olives, garlic, anchovies, capers, parsley, chile, olive oil, basil, and salt. Mix well and let stand for 1 hour.
- Cook penne until al dente (firm but not hard), stir frequently.
- Drain pasta, add to sauce, mix well and serve.
