Mexican Chicken Casserole Recipe
Great mexican favorite. Top it off with sour cream and homemade Guacamole.

Ingredients
  • 1-whole chicken or 4 chicken breast
  • 1-small onion
  • 1-7oz can of chopped green chiles
  • 1-10.5oz can of cream of mushroom & cream of chicken soup
  • 2 tbsp of real butter
  • 1/2 cup of chicken broth which can be canned or broth from the cooked chicken
  • 4 cups of shredded mild cheddar or mexican blend cheese
  • 1-pkg of yellow corn tortillas (make sure there is more than 13 in a pkg)

Directions
  1. Boil whole chicken or chicken breast (cut chicken up in small pieces)
  2. Place the cans of mushroom & chicken soup in a bowl (set aside)
  3. Mix in 1/2 cup of chicken broth and cut up chicken in the soup mix
  4. Chop 1 small whole onion
  5. Add the can of green chiles & chopped onion into a pan with the 2 tbsp of real butter to saute (cook)
  6. Once the green chiles and onions are cooked, mix in with the soup mixture of mushroom,chicken and chicken broth
  7. Cut the corn tortillas into 4 quarters
  8. Set oven at 350 degrees
  9. Lightly grease the bottom of a deep casserole pan
  10. Place 1 layer of corn tortillas on the bottom of pan than add the soup mix with a layer of cheese
  11. Do the same process in layers until mixture is all gone
  12. I do about 2 layers
  13. Cook for 20-25 mins
