Mexican Chicken Casserole

- 1-whole chicken or 4 chicken breast shopping list
- 1-small onion shopping list
- 1-7oz can of chopped green chiles shopping list
- 1-10.5oz can of cream of mushroom & cream of chicken soup shopping list
- 2 tbsp of real butter shopping list
- 1/2 cup of chicken broth which can be canned or broth from the cooked chicken shopping list
- 4 cups of shredded mild cheddar or Mexican blend cheese shopping list
- 1-pkg of yellow corn tortillas (make sure there is more than 13 in a pkg) shopping list
How to make it
- Boil whole chicken or chicken breast (cut chicken up in small pieces)
- Place the cans of mushroom & chicken soup in a bowl (set aside)
- Mix in 1/2 cup of chicken broth and cut up chicken in the soup mix
- Chop 1 small whole onion
- Add the can of green chiles & chopped onion into a pan with the 2 tbsp of real butter to saute (cook)
- Once the green chiles and onions are cooked, mix in with the soup mixture of mushroom,chicken and chicken broth
- Cut the corn tortillas into 4 quarters
- Set oven at 350 degrees
- Lightly grease the bottom of a deep casserole pan
- Place 1 layer of corn tortillas on the bottom of pan than add the soup mix with a layer of cheese
- Do the same process in layers until mixture is all gone
- I do about 2 layers
- Cook for 20-25 mins
