How to make it

  • In large bowl mix together dry ingredients and then add your shortening, milk, egg and grated apple.
  • Mix together all ingredients except the topping, with an electric mixer.
  • Pour into greased mini muffin pan - filling 2/3 full.
  • Bake for about 20 minutes till golden brown. Do not underbake or they will crumble when you dip and coat with sugar.
  • If you use buttermilk they will be even more fluffy in texture.
  • .
  • Remove from muffin pan, cool for a few minutes and then roll the doughnut buffins in a little melted butterfirst and then into the sugar and spice mixture.
  • Makes about 24 buffins. . These are usually gone at my house before I finish making them, my oldest daughter asks me NOT to make them because she cant stop eating them!
