How to make it

  • Preparation Instructions:
  • In a soup pot, melt the butter over medium heat.
  • Add the finely chopped onion and cook for around 5 minutes or until soft and translucent.
  • Stir in the flour and cook over low heat for around 2 minutes.
  • Stir in the milk, bay leaf and 1 cup of scallops, then allow to simmer for around 5 minutes.
  • Remove the bay leaf.
  • Add the rest of the scallops, 1 tablespoon of the dill, salt and pepper.
  • Heat for around 1 minute.
  • Sprinkle the remaining dill over top of the soup, then serve as desired

    Oh My Goodness-What can I say-the Cream of Scallop Soup is absolutely Wonderful. My son who does not like seafood, except my oyster stew, had a fit over this. It is Delicious!!!!!! I too had oyster crackers, and made a salad to eat with it. I don't have a recipe, but I used spring mix, red onion sliced thin, red grapes halved, chopped walnuts, blue cheese crumbles, and balsamic vinaigrette dressing. My son also ate the salad, which I never thought he would eat. The whole meal, in my opinion, went together beautifully. Surely, you have figured out it is a definate 5 Forks-right....lol Thanks for the great post. Anyone that likes scallops-this is a must do! Peace to ya, Love.

    I will be trying this one for sure. I just love scallops. Do you use the bay or sea scallops? It sounds like you use the sea scallops because you say to cut them. Poor scallop. High five and have a great day.
