Fresh Tomato and Avocado Soup

- 1 pound (about 4 tomatoes) tomatoes, chopped shopping list
- 1/4 cup red onion, chopped shopping list
- 1/4 cup seedless cucumber, chopped shopping list
- 1/4 cup red bell pepper, chopped shopping list
- 2 cloves garlic, chopped shopping list
- 2 tablespoons extra-virgin olive oil shopping list
- 1 tablespoon red wine vinegar shopping list
- 3/4 teaspoon salt shopping list
- 1/2 teaspoon cumin shopping list
- 1/8 teaspoon cayenne pepper shopping list
- 2 avocados, diced (about 2 cups) shopping list
How to make it
- Combine all ingredients except avocado in a large bowl. Mash lightly with a potato masher, stir in 1 cup water, cover, and chill for at least 1 hour or up to 6. Stir in the avocado and serve immediately.
- NOTE: Time listed above includes chopping plus chilling.
