Ingredients
  • SALAD
  • 1 bag mixed cole slaw (colorful)
  • 1.5 - 2 c. cooked chicken (ah... left over roast chicken put to use!)
  • 1/2 c. sliced almonds
  • 1/2 c. dried cranberries
  • OPTIONAL: 2/3 c. sliced strawberries
  • .
  • DRESSING:
  • 1 c. cider vinegar
  • 2/3 - 1c. white sugar
  • 2-3 Tablespoons GF soy sauce.

Directions
  1. Mix together all dressing ingredients until sugar dissolves. Set aside.
  2. Put all salad ingredients into a large bowl.
  3. Mix dressing ingredients again and pour HALF over slaw/salad fixings.
  4. Want more dressing? Add little by little - remember that cole slaw releases some liquids as well after sitting for a bit.
  5. Enjoy!
