This is a really good appetizer or , if made larger, can make a meal. Serve with lemon mayonniase and it is fantasic.

Ingredients
  • 1 pound lump crab meat
  • 1 clove of garlic, minced
  • 1/2 medium onion, minced
  • 1/2 medium roasted green pepper, minced
  • 1/2 medium roasted red bell pepper, minced
  • 1/4 cup fresh minced parsley
  • 1 stalk celery, mincd without "strings"
  • 1/3 cup self-rising corn meal
  • 1/3 cup self-rising flour
  • 1/4 cup buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon Franks hot sauce
  • 1/2 teaspoon cajun seasoning (I found that at a dollar store)
  • 1 egg
  • Salt and pepper to taste.

Directions
  1. Combine all ingredients.
  2. Mix well.
  3. Drop a heaping tablespoon of the mixture into hot oil and fry until golden brown.
  4. Drain on a paper towel.
