Spinach Cheese Dip Recipe

Ingredients

2 jalapenos,seeded and chopped

1/2 small yellow onion,chopped

1 lb white american cheese,coarsely chopped

1/2 lb yellow american cheese,coarsely chopped

1-1/2 c half and half

1 tsp ground cumin

1/2 tsp pepper

1 c shredded fresh spinach

Directions

Combine first 7 ingredients in top of double boiler. Over med-high heat,bring water to boil in bottom of double boiler;reduce heat to med-low. Place top of double boiler over gently simmering water;upper pan should not touch water.

Cook 25 to 30 mins,or till cheese is melted,stirring occasionally. Stir in spinach. Serve with tortilla chips.

I believe that this recipe could be a possibility for him to consume a vegetable that would other wise be missing in his diet.
