from a food coop, their adaptation of a Moosewood Cookbook salad, feta nd dill is added , delightful and low fat

Ingredients
  • 1 cup quinoa
  • 1 tsp olive oil
  • 4 tsp fresh lime of lemon juice
  • 1/4 tsp ground cumin
  • 1/4 tsp ground corrinader
  • 1 Tbs frsh chopped cilantro ( or parsley )
  • 2 Tbs minced scallions
  • 1 1/2 cup drained black beans or chickpeas
  • 2 cup seeded diced tomatoes
  • 1 cup sliced red, green, yellow bell peppers combo
  • 2 tbs fresh chopped dill
  • 1 1/2 cup crumbled feta cheese
  • salt and pepper to taste

Directions
  1. Cooked rinsed quinoa in the one cup of water till water is absorbed and tender, about 10 to 15 minutes
  2. In a bowl, combine remainder of ingrdients and blend well.
  3. Add the cooled quinoa , blend well and season to taste
  4. Chill well prior to serving

I've been experimenting with quinoa lately, and I love the sounds of this recipe - all the great summer flavors of tomatoes and peppers and dill, along with the feta and delicious seasonings...I know I'm going to like this one!
