Summer Quinoa Salad

- 1 cup quinoa shopping list
- 1 tsp olive oil shopping list
- 4 tsp fresh lime of lemon juice shopping list
- 1/4 tsp ground cumin shopping list
- 1/4 tsp ground corrinader shopping list
- 1 Tbs frsh chopped cilantro ( or parsley ) shopping list
- 2 Tbs minced scallions shopping list
- 1 1/2 cup drained black beans or chickpeas shopping list
- 2 cup seeded diced tomatoes shopping list
- 1 cup sliced red, green, yellow bell peppers combo shopping list
- 2 tbs fresh chopped dill shopping list
- 1 1/2 cup crumbled feta cheese shopping list
- salt and pepper to taste shopping list
How to make it
- Cooked rinsed quinoa in the one cup of water till water is absorbed and tender, about 10 to 15 minutes
- In a bowl, combine remainder of ingrdients and blend well.
- Add the cooled quinoa , blend well and season to taste
- Chill well prior to serving

I've been experimenting with quinoa lately, and I love the sounds of this recipe - all the great summer flavors of tomatoes and peppers and dill, along with the feta and delicious seasonings...I know I'm going to like this one!
