Tomato Corn Salad

- 3 large tomatoes, chopped shopping list
- 1 small red onion, halved and thinly sliced shopping list
- 1/3 cup chopped green onions shopping list
- 1/4 cup balsamic vinegar shopping list
- 3 tablespoons minced fresh basil shopping list
- 1 tablespoon minced fresh cilantro shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 4 cups fresh corn (about 9 ears of corn) shopping list
- 3 garlic cloves, peeled and thinly sliced shopping list
- 2 tablespoons olive oil shopping list
- 1 tablespoon Dijon mustard shopping list
How to make it
- In a large bowl, combine the first eight ingredients.
- In a large skillet, saute corn and garlic in oil until tender; stir in mustard.
- Add to vegetable mixture; toss to coat.
- Serve with a slotted spoon.
- Yield: 7 servings.
