Skillet Chicken Souvlaki

- 1 Tb olive oil shopping list
- 1 lb skinless,boneless chicken breast,thinly sliced shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1-1/2 c vertically sliced onions (about 1 med) shopping list
- 1 c thinly sliced green bell pepper (about 1) shopping list
- 2 tsp minced bottled garlic shopping list
- 1/2 tsp dried oregano shopping list
- 1/2 grated english cucumber shopping list
- 1/4 c 2% Greek-style yogurt shopping list
- 1/4 c reduced-fat sour cream shopping list
- 1 Tb chopped fresh flat-leaf parsley shopping list
- 1/2 tsp grated lemon rind shopping list
- 1 tsp fresh lemon juice shopping list
- 1/8 tsp salt shopping list
- 4 (6") whole-wheat soft pitas,cut in half shopping list
- 2 plum tomatoes,thinly sliced shopping list
How to make it
- Heat 2 tsp. oil in large non-stick skillet over med-high heat. Sprinkle chicken with 1/2 tsp salt and black pepper. Add chicken to pan;saute 5 mins or till done. Remove from pan.
- Add 1 tsp oil to pan. Add onion,green pepper;saute 3 mins. Add chicken,garlic and oregano,cook 30 seconds.
- Combine cucumber and next 6 ingredients(through 1/8 tsp salt). Serve chicken mixture with yogurt sauce,warmed pita, and tomato slices.
