Individual Maple and Brown Sugar Apple Crisps

- For the apple filling: shopping list
- 2 apples - I used 1 Granny Smith and 1 Jonamac. With my apple pies I like a mixture of sweet and tart apples. These make a nice combination. shopping list
- 2 T pure maple syrup shopping list
- 3 T brown sugar shopping list
- For the topping: shopping list
- 1/2 cup walnuts shopping list
- 1/4 cup oats shopping list
- 1/4 cup brown sugar shopping list
- 2 T wheat germ shopping list
- vegan margarine (or butter if you're not a vegan) shopping list
How to make it
- Preheat oven to 375 degrees.
- Peel and slice the apples into very thin slices.
- Place into a bowl and drizzle with maple syrup.
- Add the brown sugar and stir well. Taste to adjust. You may like it sweeter or more mapley.
- Put the mixture into greased ramekins.
- In a food processor, pulse the walnuts until coarsely ground.
- Add the oats and pulse again until the mixture resembles bread crumbs.
- Dump this mixture into the same bowl that held the apple mixture. The bowl should still have some of the maple syrup/brown sugar mixture in it. Stir well to mix in all the syrup.
- Add about 1/4 cup of brown sugar (I usually add it in tablespoon increments and taste as I go) and mix well. I like to add a tablespoon or two of wheat germ too.
- Cut in about 2 T of butter or vegan margarine. (I like Earth Balance) and work with your hands or a pasty cutter until the mixture resembles coarse crumbs.
- Divide between the three ramekins, packing down the crumb topping firmly.
- Bake in a 375 oven for 25 minutes or until it's bubbling nicely around the edges.
- Take out and let cool on a rack for a bit and then serve warm topped with vanilla ice cream.

Delicious! I love the individual dishes. I used Jonagold apples and made it to spec except for the wheat germ. I also used butter. Oh, and I am not a walnut fan so I subbed slivered almonds. I added some pictures and a thread in IMI. Thanks for po...more

Something about the topping we didn't care for. The nuts and wheatgerm burned and not sure if because oven temp too hot or too long a bake time or both. Too much sugar too for our taste. :(
