How to make it

  • Rinse the dried navy beans and place in a 2 quart saucepan
  • Add water, bouillon granules, salt and pepper, and carrots
  • Cook on medium -high stovetop for about 1 hour, stirring occasionally and adding more water if needed.
  • In the meantime, slightyly saute the chicken breast and chopped garlic in the oil for about 6 minutes on medium heat
  • Add the can of green chilis to the chicken
  • Add chicken mixture, spices, and pimentos to the bean mixture and cook until the beans are tender to the taste or about one more hour
  • Ladle up and serve with 2 green pepper strips for garnish
