Confetti Chicken Chili

- 8 ounces dried navy beans shopping list
- 6 cups water shopping list
- 2 tablespoons chicken bouillon granules shopping list
- salt and pepper to taste shopping list
- 3 carrots, peeled and sliced shopping list
- 1 pound chicken breast, cut into chunks shopping list
- 3 cloves garlic, chopped shopping list
- 3 tablespoons oil shopping list
- 4 ounce can green chilis, chopped shopping list
- t teaspoon dried parsley shopping list
- 1/2 teaspoon cumin seed shopping list
- 1 teaspoon dried cilantro leaves shopping list
- 2 ounce jar diced pimentos shopping list
- green pepper strips for garnish shopping list
How to make it
- Rinse the dried navy beans and place in a 2 quart saucepan
- Add water, bouillon granules, salt and pepper, and carrots
- Cook on medium -high stovetop for about 1 hour, stirring occasionally and adding more water if needed.
- In the meantime, slightyly saute the chicken breast and chopped garlic in the oil for about 6 minutes on medium heat
- Add the can of green chilis to the chicken
- Add chicken mixture, spices, and pimentos to the bean mixture and cook until the beans are tender to the taste or about one more hour
- Ladle up and serve with 2 green pepper strips for garnish
