Blueberry Oat Cake

- 2 eggs shopping list
- 2 cups buttermilk shopping list
- 1 cup packed brown sugar shopping list
- 1/2 cup vegetable oil shopping list
- 2 cups all-purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/2 teaspoon salt shopping list
- 2 cups quick-cooking oats shopping list
- 2 cups fresh or frozen blueberries shopping list
- 1 cup chopped walnuts, optional shopping list
- confectioners' sugar shopping list
How to make it
- In a bowl, beat the eggs, buttermilk, brown sugar and oil.
- Combine the flour, baking powder, baking soda, cinnamon and salt; add to batter.
- Beat on low speed for 2 minutes.
- Fold in oats, blueberries and walnuts if desired.
- Transfer to a greased and floured 10-in. fluted tube pan.
- Bake at 375° for 45-50 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
- Dust with confectioners' sugar.
- Yield: 12-16 servings.
