Rueben Casserole

- 32 oz sauerkraut (drained and rinsed) shopping list
- ½ cup chopped onion shopping list
- ¼ cup snipped parsley shopping list
- 2 teaspoons caraway seed shopping list
- 1 lb shredded swiss cheese shopping list
- 1 lb shredded mild cheddar cheese shopping list
- 2 cups dressing (mayonnaise, Thousand Island, or Russian) shopping list
- 1 lb thinly sliced corned beef (chopped) shopping list
- ½ cup butter shopping list
- 6 or 8 slices bread--cubed (light or dark rye, pumpernickel or mix) shopping list
- rice wine vinegar shopping list
How to make it
- Place the drained kraut into a bowl. Adjust flavor with vinegar if needed
- Mix in the onion, parsley & caraway seed
- Spoon contents into an ungreased 13x9 dish
- Layer with ½ the cheese, ½ dressing
- Layer the corned beef
- Layer the rest of the cheese & dressing
- In a large skillet, melt the butter & coat the cubed bread
- Sprinkle over the top of casserole
- Bake for 35 min @ 375 F
