Drunken Chocolate Cherry Cheesecake Recipe
Cherries reconstituted with rum in a rich chocolate cake. Not for the faint of heart!! You may substitute bourbon for the rum if you wish. Brandy may also work, I have not tried that as yet.

Ingredients
  • Chocolate Crust-see crust recipe page
  • 6 ounce dried tart cherries
  • 1/2 cup dark rum
  • 1 1/2 pounds Philly cream cheese, softened
  • 3/4 cup sugar
  • 3 large eggs
  • 1 tea. rum extract
  • 1 tea. cherry extract
  • 1/2 cup heavy cream

Directions
  1. Place cherries in medium bowl or jar.
  2. Pour rum over cherries, stir lightly.
  3. Cover and set in fridge overnight.
  4. Preheat oven to 350^.
  5. Blend cream cheese and sugar until smooth.
  6. Add eggs one at a time.
  7. Add extracts and cream, mixing thoroughly.
  8. Layer cherries in prepared pan.
  9. Pour filling over cherries.
  10. Bake at 350^ for 55-65 minutes.
  11. Let cool and refrigerate before serving.
