How to make it

  • Place corn in steamer basket set over a saucepan of simmering water. Cover and steam 8 mins.
  • Meanwhile ,grate lime zest into small bowl and squeeze in 1 Tbs lime juice. Add the sour cream,cilantrohot sauce and 1/4 tsp salt and mix well;set the dip aside.
  • Remove corn from steamer basket and let cool slightly;then cut kernals off the cobs. Combine with 1.2 tsp salt in a bowl.
  • Line a large baking sheet with paper towels,then arrange the wonton wrapppers on top in single layer.
  • place 1 tsp corn,1/2 tsp tomato,1/2 tsp avocado and 1/4 tsp red onion in center of each wrapper.
  • Heat avout 1-1/2" oil in large pot until it registers 375 on thermometer;bubbles should form around it.
  • Moisten edges of wonton wrappers with water,fold in half diagonally to enclose the filling and form a triangle;press gently to seal.
  • Working in batches,lower wonton in hot oil with tongs and fry 1 min.. flip and fry another 30 seconds or till light golden. Transfer to paper towels to drain. Serve with cilantro like dip
