Fresh Mex Corn Wontons

- 3 ears corn,husked shopping list
- 1 small lime shopping list
- 1-1/2 c sour cream shopping list
- 3/4 c fresh cilantro,finely chopped shopping list
- 2 tsp hot sauce shopping list
- kosher salt shopping list
- 36 square wonton wrappers shopping list
- 2 plum tomatoes,diced (about 3/4 c) shopping list
- 1 med. avocado,diced (about 3/4c) shopping list
- 1/2 c finely diced red onion shopping list
- vegetable oil for frying shopping list
How to make it
- Place corn in steamer basket set over a saucepan of simmering water. Cover and steam 8 mins.
- Meanwhile ,grate lime zest into small bowl and squeeze in 1 Tbs lime juice. Add the sour cream,cilantrohot sauce and 1/4 tsp salt and mix well;set the dip aside.
- Remove corn from steamer basket and let cool slightly;then cut kernals off the cobs. Combine with 1.2 tsp salt in a bowl.
- Line a large baking sheet with paper towels,then arrange the wonton wrapppers on top in single layer.
- place 1 tsp corn,1/2 tsp tomato,1/2 tsp avocado and 1/4 tsp red onion in center of each wrapper.
- Heat avout 1-1/2" oil in large pot until it registers 375 on thermometer;bubbles should form around it.
- Moisten edges of wonton wrappers with water,fold in half diagonally to enclose the filling and form a triangle;press gently to seal.
- Working in batches,lower wonton in hot oil with tongs and fry 1 min.. flip and fry another 30 seconds or till light golden. Transfer to paper towels to drain. Serve with cilantro like dip
