How to make it

  • In a mini blender add garlic,chillis , coriandre and garlic
  • whiz till finely blended to make a medium coarse paste
  • boil potatoe in hot water till done about 10-12 minutes
  • steam pumkin or cubed skinless squash for 10 minutes
  • or till done. test doneness by a fork
  • in a lrge bowl mash pumkn,boiled potatoes and mix well
  • add chilli garlic paste,citrus salt and mix all very well
  • salt to taste
  • drizzle olive oil and mix
  • sprinke with chopped parsely or cilantro
  • this can be used as a side dish with some grilled meats or fish
  • with a teaspoon scoop some on fresh pita bread triangles
  • goes well with light white wine or ice cold pilsner
  • very pleasing to the eye and extremely healthy
