Ingredients
  • 1 large free range chicken cut into 6-8 pieces
  • 4 large peeled and sliced potatoes
  • 3 peeled and thinly garlic cloves
  • 2 white onions thinly sliced
  • 2 lemons thinly sliced
  • 4-5 sprigs fresh rosemary
  • clay pot or rommeltopf
  • 1/2 teaspoon corse grind blackpepper
  • 1 tablespoon extravirgin olive oil

Directions
  1. prefer to get rid of the chicken skin
  2. in claypot,put a layer of onion followed by
  3. a layer of potatoes topped with chicken pices
  4. spread rosemary sprigs on top,add remainder
  5. or of potatoes,onions and sliced lemons
  6. drizzle with the olive oil
  7. cover claypot or rommeltopf tightly
  8. place in a preheated over of 350 degrees
  9. cook for about an hour
  10. enjoy it with cabernec franc or berbera or any light to medium red wine
