How to make it

  • First pre-heat a moderate oven (180c)
  • In a food processor blend half the chorizo and half of the garlic. Season to taste
  • Stuff each of the squid tubes with one cube of feta and fill with the chorizo mixture
  • Flash-fry the stuffed squid in a little olive oil for a minute or so
  • Remove and place on a roasting tray and into the oven
  • Now cook the linguini in slightly salted water
  • In the same frying pan you used for the squid add a little more olive oil and fry the onion, tomatoes and garlic. Season to taste
  • When the pasta is done, drain and add to the pan and combine with the sauce
  • Divide the pasta onto two plates and top with three of the baby squid
  • Garnish with the fresh basil and oregano leaves
  • Serve immediately while still hot

    I like Calamari..so..perhaps I shall print this very nice recipe,and try it when I am in possession of fresh squid..which might have to be postponed for when I'm on the coast.
