A wonderful pasta dish with spicy flavoursome stuffed squid with chorizo and feta cheese

Ingredients
  • 6 baby squid tubes cleaned
  • 6 garlic cloves, finely chopped
  • 1 small piece of chorizo, chopped into small cubes
  • Feta cheese cut into six small cubes
  • Linguini or other pasta of choice
  • 6 baby plum tomatoes, halved
  • 1 small red onion, chopped
  • Olive oil for frying
  • Basil and oregano leaves to garnish

Directions
  1. First pre-heat a moderate oven (180c)
  2. In a food processor blend half the chorizo and half of the garlic. Season to taste
  3. Stuff each of the squid tubes with one cube of feta and fill with the chorizo mixture
  4. Flash-fry the stuffed squid in a little olive oil for a minute or so
  5. Remove and place on a roasting tray and into the oven
  6. Now cook the linguini in slightly salted water
  7. In the same frying pan you used for the squid add a little more olive oil and fry the onion, tomatoes and garlic. Season to taste
  8. When the pasta is done, drain and add to the pan and combine with the sauce
  9. Divide the pasta onto two plates and top with three of the baby squid
  10. Garnish with the fresh basil and oregano leaves
  11. Serve immediately while still hot

Very interesting dish. Gets a 5 from me :)


I like Calamari..so..perhaps I shall print this very nice recipe,and try it when I am in possession of fresh squid..which might have to be postponed for when I'm on the coast.
