What have you been canning or freezing this season?

Corn, corn and more corn. The corn trucks along the roads are thick here, so there is no reason not to have corn during the winter. I froze some on the cob and some cut off and would like to get more, so that I can pressure can some.
I've also just made plum jam, which Hubby thinks is really good.
Will be doing blueberries today and peaches tomorrow. Also have a bushel of applesauce apples to deal with over the weekend.
Also have red grapes on the vines that need to be dealt with. I'm thinking of making juice, as there are a lot there.
Busy, very busy.

Yes, grapes are in season. We have done 3 cullings so far.
I have been freezing marinara sauce, meat marinara sauce, pasta in sauce.
As soon as I can afford it, I'm buying a pressure canner so I can can everything.
All I have now is a makeshift water boil canner using the stock pot as a vessel.
When I made my first batch of jelly I didn't understand that the jar had to be completely submerged in the water. Didn't kill anybody though.

I found a new canning cookbook full of recipes that I can't wait to try. I normally just use the basic Ball canning book but when I ran across this Ball book, I had to have it.
This one has 400 recipes of all sorts. I've found some really good jam and preserves recipes that i just have to try. My plum jam recipe came from this book and turned out quite well. I've found so many good sounding recipes that I can't decide which to use. I especially want to try the carrot cake jam recipe, which sounds delicious and has promises of tasting just like the cake. I'm drooling over it, so it's on my list of to-dos.
Will post results when I've tried another recipe.
