I don’t want to knock this recipe. I’m sure this belongs to someone's Grandma and is a true comfort meal. The chicken looked beautiful and was somewhat moist. It didn’t have any flavor and that’s o.k. I like to use the leftovers for chicken salad. We didn’t care for the red cabbage at all. Well, purple because the stores here do not carry red, only purple or green. All seasonings were completely lost. It tasted like plain cabbage soaked in chicken fat. I had to pour vinegar and pepper over it to give it flavor. I guess I was expecting it to have the sweet 'n sour taste like German red cabbage.

What a shame DIZ3! Looking at the recipe I`d have thought it would be a good one! :( That red cabbage should have had oodles of flavour you`d think. :( I`m glad you gave us a heads up. Thanks for sharing.

Hi, Chuckieb! I thought for sure I would be able to taste the thyme. It smelled strong when mixing.

Bummer DIZ that the recipe wasn't all that and more. I know what you mean about it being valued in a family but … The picture is fantastic though and it sure looks good! The cabbage part looks like it should of had flavor but the chicken part needs seasoning. ??

Too bad about the recipe DIZ, especially the cabbage :( At least you can use the chicken for chicken salad! I bet the cabbage just cooked up in a skillet instead of under the chicken would have been so much better. Your picture is fantastic :)

Beautiful picture Diz! The chicken looks perfectly roasted and delicious!
Too bad the cabbage didn't turn out. :( Funny how it said to cook it twice, you'd almost think it should have been the other way around---cook with the chicken first than sauté with cider and vinegar? Like you said, can't really knock the old family ways! ;)

Hey, LindaLMT! Thank you! The chicken could have used more seasoning that's for sure. I've started using AR's recipe for Juicy Roasted Chicken. Another German recipe. It doesn't have a ton of flavor, but yields one gorgeous, juicy chicken.

Thank you, Mommyluvs2cook! I believe you are correct about cooking the cabbage in a skillet. With bacon grease, of course. :) Something about the chicken fat just didn't taste right. Maybe more seasonings also. Two teaspoons of vinegar goes no where in a skillet full of cabbage.

Thank you, Cosmicmother! The cabbage definitely needs cooked twice one way or the other. The finished product was barely cooked as it was. I ended up doing what you suggested. I put it in a pot and cooked with vinegar. Before I put it in the fridge, I added some cloves and allspice. Hoping it tastes better today.
