Bratkuehn II Roast Chicken Recipe
Here's another one, and like the other, you get a whole meal in one. As the chicken roasts, its juices drip down into the bed, and the cabbage is arguably the best part. Serve with rye, and if you partake, beer.

Ingredients
  • 1 large onion, sliced
  • 1 head red cabbage, shredded
  • 1 apple, cored, peeled, shredded
  • 1/2 t. thyme
  • 1/2 t. celery seed
  • salt and pepper to taste
  • 1/2 c. apple cider
  • 2 t. apple cider vinegar
  • 1/2 t. salt
  • 1 roaster or capon, or 2 fryers
  • 1/2 stick butter, divided in half
  • 1 bunch flat-leaf parsley
  • salt and coarsely ground black pepper

Directions
  1. Preheat oven to 375.
  2. Heat oil in a large frying pan over medium high heat. Add onion, and cook for 2 minutes until soft. Add cabbage, apples, spices, salt and pepper. Add cider and vinegar. Cook for 5 minutes.
  3. Spoon the cabbage mixture in a baking dish. Rub half the butter all over the cavity, then stuff with the flat-leaf parsley. Rub the remaining butter over the outside of the bird, then sprinkle with salt and pepper. Place chicken on cabbage, and roast, basting twice, until thickest part of the breast registers 160.
  4. Taste the cabbage, and salt and pepper to taste before serving.

We made this last night and it was very good. For our tastes, half the butter would do the trick. Otherwise, it was perfectly balanced.
